AKA lentilles du puy.  Like other lentils, these blue-green lentils are low in fat, high in protein and fiber, and have a mild, earthy flavor.  What makes them stand apart is that they’re more robust than other lentils, and have a somewhat peppery flavor.  They keep their shape even after cooking, making them ideal in boldly-flavored and chunky soups like this one.
