I never thought I would like beets. Who eats pink-ish food?? But don’t let the color fool you! This is now one of my favorite dishes and quite delicious. Not to mention – full of healthy vegetables!
- 2 large beets
- 2 medium carrots
- 2 large potatoes
- 1 teaspoon garlic powder
- ½ teaspoon salt
- ½ cup vegenaise
- ⅓ cup relish or diced pickles (optional)
- Wash, peel, and dice the beets, carrots, and potatoes. Place into a saucepan and fill with water just to cover the top of the vegetables.
- Bring the vegetables to a boil and simmer for about 45 minutes or until tender when pricked with a fork. Remove vegetables from heat.
- Add the rest of the ingredients to the vegetables and stir until well mixed. Enjoy warm or cold!
Ready in about 1 hour 15 minutes
