Memorial Day Salad Your Friends Will LOVE!

Spring has sprung, it’s warming up everywhere and Memorial Day has arrived as the first long weekend of the summer. So if you’re wondering what plant-based dish to bring to a barbecue, dinner party, church gathering, or wherever you end up going this weekend, we recommend The Asian Slaw with Red Chili Peanut Sauce. It pairs great with whatever you’re having–whether it’s a vegan gathering or a barbecue. Cabbage is a veggie that will hold up well and stay crunchy and fresh while sitting on a food table for hours.  And it’s super nutritious, full of fiber and has a low glycemic index. And the plant-based sauce (hold or reduce the chili if you don’t like spicy) is low calorie, easy to make but oh so delish. Trust us you will get compliments.
