Lentil Roast

This roast made with lentils, nuts, and cornflakes is an extremely cheap and easy way to satisfy a whole family.  Try smothering it with our Brazil Nut Gravy with a side of roasted vegetables for a hearty dinner.

Ingredients

2 cups cooked green or brown lentils
1 cup pecans, chopped
3 cups cornflakes
2 cups unsweetened soy milk
1 medium onion, finely chopped
1 teaspoon dried sage
½ teaspoon garlic powder
1 teaspoon salt

Instructions

  1. Preheat oven to 350°F. Crush cornflakes in a plastic bag and combine all ingredients in a bowl. Continue mixing until it reaches a thick consistency, adding more cornflakes if there is any excess liquid.
  2. Then transfer the mixture to a casserole dish, and bake for 1 hour. Set aside for 10-15 minutes to let it cool, then slice into 10 portions to serve.
