Melt the vegan butter in a pot on medium heat. Add onions, celery, and garlic to the pot and saute until the vegetables are tender and the onions are clear.
In a bowl, whisk the vegetable broth, chicken seasoning, sage and thyme together. Pour this mixture into the pot and bring the entire mixture to a boil.
Once boiling, add the bread cubes to the mixture and mix until they are all well coated.
After that, turn off the burner and cover the mixture for 5-10 minutes.
Fluff the stuffing with a fork and serve.
Starting with a pan on medium-low heat, melt the vegan butter and add the flour while stirring constantly with a whisk to avoid clumps.
Add one cup of water and one cup of soy milk and bring to a boil. Continue stirring the gravy constantly with the whisk.
While waiting for the gravy to come to a boil, add in all of the dry ingredients and continue stirring.
As the mixture heats it will start to thicken. Once it comes to a boil it should be the consistency of gravy. At this point discontinue heating and serve.
