Protein-Packed Quinoa Salad

Protein-Packed Quinoa Salad

This earthy, nutty flavored, grain-like seed makes a great rice substitute. It’s gluten-free, packed with protein, and delicious!

Life and Health tip:  Remember that grains in your salad still count as carbohydrate servings. To bulk up this meal, could add extra beans and serve with carrot sticks and fresh fruit.

Queen of Greens Salad

Kale is one of the healthiest vegetables on the planet.  It’s been called “the new beef,” “the queen of greens,” and “a nutritional powerhouse.”  Why?  It’s low in calories, high in fiber, iron, calcium, and Vitamins K and C, has zero fat, is filled with powerful antioxidants, is a great anti-flammatory food, and is good for cardiovascular support. We love kale and hope you will too. This salad is a great way to start!

Roasted Beet and Carrot Salad

The recipe is simple but the unique roast-y flavor and sheer beauty makes it the perfect dish to bring to a winter potluck dinner.

Mock Tuna Salad

Believe it or not, this tastes like the real thing, incredibly and almost eerily so. Serve it as you would with any other tuna salad: on crackers or toasts, in a wrap, or with celery sticks.
