Pancake Puffs

I wanted something special for my Mum’s birthday breakfast, not the usual. After some internet searching this idea came up. With some healthy touches a breakfast was made—fit for a queen!

Oil-Free Granola

Although granola has a healthy image, many granolas are actually full of sugar and oil. This granola is perfect for individuals on low-fat diets, it contains no added fats and still tastes great (thanks to the coconut and almond butter). You can also substitute or add in you favorite nuts or dried fruits to suit your taste.

Vegan Biscuits stacked on a plate

Vegan Biscuits (KFC Style)

Prior to switching to a plant-based diet, I grew up eating KFC. My favorite were the biscuits. I felt that I wanted to create a vegan version of this childhood favorite. There’s something about a warm, flaky, buttery biscuit that is so satisfying, especially during the holidays. Even if you’ve never had KFC biscuits, these are the perfect biscuits to have if you are looking to make biscuits and gravy. These are also great for breakfast sandwiches.

Gallo Pinto

This simple but appetizing dish is usually eaten for breakfast in both Costa Rica and Nicaragua, although it is also served at other times of the day. It can be done with black or red beans. It is usually accompanied with corn tortillas or male bananas if desired, but for a more balanced meal for diabetics, we recommend accompanying it with a steamed salad or vegetables.

Simple Pancakes (Diabetes Undone Edition)

Simple Pancakes

We love these light and fluffy pancakes exactly the way this picture shows: with a little dab of almond butter and sliced bananas.

Strawberry Fields Smoothie

Created by my dear friends and smoothie wizards Ashley Kim and Rachelle Diaz, this smoothie honestly tastes like what its name implies, with a surprisingly summery note from the basil

Tangerine Bliss Smoothie

I was tempted to name this “Tangerine Julius” because of how intensely similar it tastes to the drink sold at the popular mall food court staple “Orange Julius.”  It’s frothy, vividly orange, and feels like you’re eating a glass of sunshine.

Quick Chia-Nut Granola

It’s dangerous to have crunchy, freshly baked granola sitting on the counter within arm’s reach.  This is a small batch so exercise your willpower and appease your temptations with just one hot cluster.

Large-Batch Date and Nut Granola

Why such a large batch? A family of five can eat and enjoy an astonishing amount of granola for breakfast. Plus, what is granola but a perfect breakfast food, garnish, and everyday snack?
