Although granola has a healthy image, many granolas are actually full of sugar and oil. This granola is perfect for individuals on low-fat diets, it contains no added fats and still tastes great (thanks to the coconut and almond butter). You can also substitute or add in you favorite nuts or dried fruits to suit your taste.
Prior to switching to a plant-based diet, I grew up eating KFC. My favorite were the biscuits. I felt that I wanted to create a vegan version of this childhood favorite. There’s something about a warm, flaky, buttery biscuit that is so satisfying, especially during the holidays. Even if you’ve never had KFC biscuits, these are the perfect biscuits to have if you are looking to make biscuits and gravy. These are also great for breakfast sandwiches.
This simple but appetizing dish is usually eaten for breakfast in both Costa Rica and Nicaragua, although it is also served at other times of the day. It can be done with black or red beans. It is usually accompanied with corn tortillas or male bananas if desired, but for a more balanced meal for diabetics, we recommend accompanying it with a steamed salad or vegetables.
