Oat Burger

Scrumptious burgers are an American classic. However, these burgers are much cheaper and much healthier than store-bought vegeburgers. As a bonus, they freeze well, so you can pull a few out of the freezer when you need a quick meal.

Asian Shiitake, Kale, and Rice Bowl

I wouldn’t say this lightly but…this tastes like something my mom would make (in a really, really good way). If you’re apprehensive about cooking home-style Asian food, this is the perfect recipe for you to start with.

Baked Falafel

Falafel might be one of the things you’ve never made from scratch before, but don’t be intimidated. The food processor does double duty for the chickpea mixture and the falafel balls are easily hand-or-ice-cream-scoop-formed, thanks to the breadcrumbs that bind everything together. One bite into a warm whole-wheat pita stuffed with freshly baked falafel and a few shakes of hot sauce, and ordering take out falafel will seem like too much trouble.

Mujaddara (Lebanese Lentils)

Delicious and easy to make, this makes the Top 5 list in the Life and Health office. The lentils and rice on their own are wonderful and full of deep flavor but the addition of caramelized onions lacing the top of the dish turn it into a gourmet, hard-to-forget meal.

Creamy Mushroom Stroganoff

Many Russian, East European, German dishes are meat and cream heavy, loaded with cholesterol and saturated fat. By using cashews and multiple varieties of mushrooms, you can save the stroganoff without harming your health.

Kenyan Beans and Rice

In Kenya, this dish would be called mahragwe (simply “beans” in Kiswahili). It’s an extremely simple stew of kidney beans, coconut milk, tomatoes, and curry spices. It’s easy to make and even easier to eat.

Lentil Roast

This roast made with lentils, nuts, and cornflakes is an extremely cheap and easy way to satisfy a whole family. Try smothering it with our Brazil Nut Gravy with a side of roasted vegetables for a hearty dinner.

Honduras Baleadas

Baleadas are one of the most appreciated dishes of Honduran cuisine. Because it consists of an omelet stuffed with beans and a variety of other ingredients, they look a lot like Mexican tacos and burritos, although with a peculiar Honduran touch. Because they are simple and easy to prepare, they are an excellent choice for a quick breakfast or lunch.
