Avocado Toast

We've nicknamed this "the best avocado toast you'll ever have." The quality is in the details... crusty and seedy toast, perfectly ripe avocado, tangy lime, and a bonus black bean protein boost.

Ingredients

 4 thick slices of multi-grain bread
 1 ripe avocado
 1 pinch salt
 ¼ lime, juiced (1 tsp)
Optional Add-ons
 1 large tomato, sliced
 ½ cup black beans, warmed (for added protein)

Instructions

Pit the avocado, then scoop the flesh out of the skin into a small bowl. Sprinkle on salt, then spritz with the lime.

Mash with a fork (mash well to create a smooth spread, or mash just a few times to create a chunky spread).

Toast the bread, then spread the avocado on each slice, adding sliced tomato and/or a spoonful of black beans on top for added protein.

  1. I’m trying to doing to meals a day to reduce my sugar number and become healthier. When you say one slice of toast or one cup of scrambled tofu, one cup of overnight oatmeal do you mean that’s all we have for breakfast or can we have oatmeal and toast or beans on toad with scrambled tofu? Shouldn’t we be making a hearty first meal? I’m trying to make a breakfast that doesn’t have me feel hungry in a couple hours. I’m waiting at least 5hours for next meal. I know this is a long question but I am really seeking answers. Thank you .
