This versatile dressing can be used on salads but also works great as a dip.
Ingredients
½ cup cashews
¼ cup lemon juice
1 tbsp chopped onion
1 tbsp pineapple concentrate
½ tbsp salt
1 tsp nutritional yeast flakes
½ cup water
½ cup Mori-nu tofu, firm
¾ tsp dried basil
¾ tsp dill weed
¾ tsp Italian seasoning
¾ tsp marjoram
¾ tsp parsley
¾ tsp oregano leaves

Blend all ingredients except herbs until silky smooth. Add herbs and pulse to just mix together.
