Weekly Roundup: Valentine’s Day Recipes For You & Yours

Be warned, this is a dessert-heavy round of recipes.

For most people, Valentine’s Day is when you call all of the best restaurants in town and scramble for a reservation—any reservation. It’s stressful more than anything else. So we have an idea for this upcoming Valentine’s Day:

Turn off your cell phones,
turn off the TV,
turn on the stove,
and cook something exciting.

Dedicate an entire night to food. Doesn’t sound too terrible, right?

Whether or not you have a significant other, use this day as an excuse to spend a few extra minutes stirring a pot over the stove. Treat yourself! Have brinner (breakfast for dinner). Make yourself a veggie stew with heart-shaped carrots. Stir beet juice into a flour mixture and make pink empanadas. Have lots and lots of dessert.

Happy Valentine’s Day from us to you (and/or yours).

Crispy Delicata Rings with Currant, Fennel & Apple Relish via Food52: “And the resulting dish is like nothing you’ve had before. The squash rings are richly caramelized, the relish zingy, and the lime juice and zest brighten it all, keeping a sweet dish in check. We’ll be making this one for years to come.”

Thai Pomelo Salad and Thom Kha via Green Kitchen Stories: “It is creamy, mild and yet very flavorful from the big chunks of lemongrass and galangal. Another favorite is the pomelo salad, being both sweet, savory and a little spicy. And it’s the first time we have seen a recipe where the lemongrass is chopped so thin that you actually can eat it.”

Mushroom Risotto with Caramelized Onions via The Kitchn: “ a creamy, thick, baked rice dish full of dark mushroom flavor. Topped with sweet caramelized onions and a flurry of pepper, it’s one of the most satisfying things I’ve eaten this week.”

Valentine Rawlos via My New Roots: “Healing fats, nutritious sweeteners and antioxidant-rich cacao are all that these little chocolate-caramel bombs are made of. No schwaggy unpronounceables. No weird waxes or emulsifiers or artificial flavours and colours. If you really care about your valentine, this year make them something that will love them as much as you do!”
